First of all, I hope you enjoy you ADOM days. If you don't mind being
spoiled, there is an absolutely amazing guidebook, offering info on
practically anything you could want to know about ADOM.

In case you don't want to be spoiled too much, I'll try answering your
questions accordingly. Village dungeon is not the only quest you can get
in Terinyo. There are two other people to send you on a quest, but one
of them is not available if you've already taken that village dungeon
quest. (There is actually the forth quests too, but that one will not
enable your to enter any new dungeons that you don't see before taking
the quest).
Apart from these two quest dungeons, you can descend through the SMC,
which gets more and more dangerous the higher your level, go the the
never-ending ID for some items and experience or go to the other part of
the map through the wilderness. (As to bridge-building, it cannot be
used on the wilderness map. To cross those rivers, you have to know
swimming. Bridge building is possible for rivers that appear in
dungeons, but you'll need materials.)
Identifying weapons (and to some extent other equipment) is possible by
equipping them and if you know they are not cursed it's safe most of the
time. Similarly, reading scrolls or drinking potions can identify some
of them, but it's not advisable in most cases. ID scrolls themselves are
one of the most common scrolls in the game so chances are they are the
largest stack you have after a while. Going over items in a shop will ID
them, so if you find an ID scroll in the black market in the village
west of Terinyo, you don't have to play the guessing game. Blessed ID
scrolls will ID your entire inventory, including the
cursed/uncursed/blessed status.
Altars serve a lot of purposes, including identifying the
cursed/uncursed/blessed status by dropping them on an altar of your
alignment once you are in sufficiently good standing with your God. The
messages you get when saccing monsters or items on the altar indicate
various levels of piety. Praying to your god can help you when in
difficulty and depending on what's granted to your will use more or less
of the piety. Praying when not in need and at highest level of piety can
get you crowned (or pre/post crowned, depending on your alignment).
Talents you've been choosing are mostly very useful, except the learner
one, which is probably a good choice only if playing trolls, who level
three times slower, but even then the 2 percent is of marginal use.
Treasure Hunter is widely considered to be the best talent as it
increases significantly the number of drops and thus your chances of
finding good items. To have it, you need to choose alert as one of your
talents when creating a character (and miser at some point, but that one
can chosen any time in the game). IIRC, Skilled talents are bugged and
will crash your game, so avoid them.
Of the void is one of the number of modifiers you can get on
weapons/armor, indicating their special abilities (in this case,
occasionally makes enemies panic and flee).
Special endings have a number of prerequisites and attempting one
probably means you'll have to spoil yourself to learn what they are.
They are sweet, but not as sweet as the first win even if regular :)
