The only true version of Doom would be prBoom 2.0.3 - this remains true to
the original game and only makes bugfixes and engine updates. Doomsday
(also known as jDOOM), ZDoom and most other ****ts are varients of the Doom
engine that add a lot of features to make the game look more "Modern".
The thing you should know is that all of these clients are incompatable.
If you want to use internet play with one of the ****ts, all the clients
must be using the same version (e.g. all prBoom or all ZDoom, etc.)

IIRC, the Windows 95 Launcher is basically desinged for Lan play, not
Internet play. You could use it, but don't bother.

You have to select Winsoft TCP connection for DirectPlay. The other
options are either obsolete, or with a serial ****t connection (by modem or
null-modem cable.) Then, you need to provide other people your IP
address
by typing in "ipconfig" at the command prompt (or a Dos window). At which
point, they will enter your IP address to connect to your computer.
Although, I never remembered having the option to enter the IP address.

Definatly - I find JDoom seems to have the ability to join games using an
internet tracking server, or by entering the IP address, all within the
game itself. However, the lack of Doom players requires you to arrange a
time to play the game with your friend.
