Sorry, you reminded me about the movie I saw yesterday, "The Blue Max".

Remembering Angus' criticism towards the flight model of Wings and
particularly the lack of throttle control I recently found out that the 
early World War I fighters (especially those with rotary engines) did 
not have throttle control at all! The engines always run on full
throttle
and pilot had to use manouvres to slow down the machine (same you
have to do in Wings). Landing was also particularly challenging, as the
only way to slow down during the glide was to cut off the engine, then 
start it again.

So it appears the flight model of Wings is bit more realistic than it
is commonly thought   ;)
