Try giving them wood (or access to wood). You may find they
build a totem or rebuild their old one.
I'm doubtful that the original one has really completely
disappeared but if all else fails then there are extreme ways
to convert a town: steal its population one by one and either
kill them or add them to your own population. Both methods
have their drawbacks which I'll leave you to find out on your
own. Once the town is entirely populated, just put one of
your own believers in there and the town is, by definition
yours.
