I am not a pilot, but I'm sure this is how a roll works.
Moving the stick to the (for example) right in a fixed wing aircraft
raises the right aerilon and lowers the left. This has the effect of
raising the left wing, lowering the right and causing an aircraft to
roll and bank right. There are other forces and actions but this is
for simplicity.
When you put the stick back to the centre the aerilons return to the
nuetral position. They do NOT apply any opposite forces on the
aircraft, so it STAYS in the bank. To get out of the bank you must
apply (in this case) left stick to level out.
So, the joysticks behaviour is correct, it's your expecttions that are
wrong, sorry.
